need recipe for champagne/cream/herb sauce

Local restaurant served this entree and it was delicious. Restaurant closed. Sauce Included combination of shrimps/scallops/lobster served over puffed pastry shells

Hi, This is a sauce for Chicken Kievs stuffed with walnuts and sage that I make. I think you could substitute champagne for the white wine, and add 2 TBLs of cream at the end. Saute the sage leaves in the butter, then add the wine. Simmer and add the walnuts, and lemon zest. You could omit the lemon juice. Then add the cream and simmer. Salt and pepper to taste.

2 tablespoons chopped sage leaves
2 tablespoons butter
1 cup white wine
handful of toasted walnuts
juice of 1/2 lemon
zest of 1/2 lemon
Ground salt and pepper to taste
