What's a good, easy dinner for a movie night?

I'm having a night in with a good friend. We're watching movies. I usually do something snacky, like wine, cheese, crackers, and fruit. Any suggestions on something new, but equally as fun and easy?

That and the dim sum mentioned would make a nice meal ...maybe some rice bowls and miso or egg drop soup..and sliced fruit.

Our group likes to shop at specialty stores for unusual foods that require either no or very little prep work. We have fun sampling a variety of foods that most of us have never tried previously.

I think homemade or assemble your own "sushi" rolls would be fun, and dim sum type stuff since its all sort of bite sized.

Nachos, popcorn, take-out Chinese, a tasting of artisan hard cider, pickles, baked hotwings, beet salad.
