You can cut tenderloin into 1" slices, pound flat to 1/4", dredge in flour, egg, then panko bread crumbs. Pan fry until golden in butter and oil and serve with tonkatsu sauce (the Japanese section of your food store). Pork Tonkatsu . Serve with rice and a veg.
(tonkatsu sauce is similar to A1 steak sauce)

Pork medallions are cut from pork tenderloin, a cylindrical, 10-12 inch piece of pork from the pig's back!
