Need an easy "Pie" recipe...I'm not a big "baker" and its for a work pie event

There's nothing shameful about using a commercial crust! Then the filling is your own, thus the pie is your own.

Check out Lazy Mary's Lemon Tart or Lazy Mary's Improved Lemon Tart on Food52. If you don't find Meyer lemons, you can use regular lemons (read the comments on both). Pie doesn't get easier than this!
