I always double it, and it's easy to make a vegan version using a 50/50 split of shortening and margarine.
2.5 Cups Flour
1 tsp Salt
2 TB Sugar
3/4 Cup Butter
1/2 Cup Shortening
6-8 TB Ice Water
Combine all dry ingredients in food processor, pulse a few times to combine. Add butter in chunks, pulse 4 times. Add shortening in chunks, pulse 4 times. The mixture should look like coarse cornmeal with little peas of butter. Sprinkle 6 TB of water and pulse a couple times. If you pinch the dough and it sticks together, it's ready. If it doesn't, add 2 more TB of the water and pulse again. The dough should just come together, it shouldn't be wet. Remove the dough from the machine and make it into 2 mounds and then flatten them into disks. Place in plastic wrap and put in the fridge for an hour. Then roll out on a lightly floured surface and put in the tin, trim edges.
If you don't have a food processor, no worries. This all can be done by hand using a pastry cutter or two knives. It just takes a little longer.
