What to do when there's too much garlic in your sauce

Depends on the sauce. I would add more of the sauce bases in proportionate amounts.

Add more sauce or you can add some water. It also matters on what type of sauce you are making.

Add water or wine. Then reduce the sauce to the thickness that you desire
