i made cha gia (Vietnamese rice paper rolls) and they exploded in the hot fat. Does anyone know why?

It sounds like you may have cooked them in too high heat. It's recommended to cook the rolls on medium to low heat so they turn brown and crispy but don't cook too quickly and burst
