Looking for a simple brine for a smaller turkey. Usually our turkeys are larger, but I don't know if that makes a difference or not. Last year's turkey was too salty. Thanks!

Many turkeys are already "basted" (i.e., brined). You can still brine it a bit more with kosher salt and brown sugar in water (I forget the ratio - google "Neely's brined pork chops" for the ratio). Just don't leave it in too long and you should be good to go
