Any creative uses for leftover fortune cookies or crunchy Chinese noodles?

I like to break up the crunchy dried noodles a bit and put them in a salad with broccoli slaw, shredded cabbage, chopped cucumber, toasted almonds and sunflower seeds --- dressed with a rice vinegar/sesame oil & soy vinaigrette.
