Recipes are all over the place--from 60 minutes to 24 hours. At what point is it good enough? I just got the marinate on a steak. Should we have it tonight or tomorrow?

I like to marinate for 1-2 hours. My flank steak recipe turns out perfectly with the marinade sitting for that length of time.
It depends. The marinade's ingredients, time, temperature are all factors. Recipes are indeed all over the place, as is misinformation about the subject.
