I get a beet, carrot, apple and ginger juice every day from my local health food store and they use raw beets. Now that is using a juicer, I would imagine using a blender for a smoothie would be similar. Have never made a beet smoothie but if you cooked them they would probably blend more easily and you could use the cooking liquid as one of the components of the smoothie so you don't lose vital nutrients.
Roasted beet has sooo much more flavor.
