Ok I love soul food, as any true southerner and wanted to know how to make the perfect candied yams.

I all ready know how to make it to be honest but I love seeing other people's interpretations of a classic dish.

I like to parboil the yams and the pan fry them in browned butter to caramelize the yams before baking them. I also think that good maple syrup and fresh squeezed orange juice/zest make a big difference.
