making baked cheesecake for the first time. It's at the end of cooking time and is looking a lot like soufflé - normal?

Yes. Give the pan a little tug -- if the center and sides all move together, it's done. If the center moves more quickly, then it's still too liquid in the center. Sorry I didn't get to your question sooner -- hope it worked out!
