Don't have time to finish my gnocchi. Should I stop after making dough & fridge it? Any opinion? Never happened before.

i usually let my gnocchi dough rest overnight in the fridge before rolling it out, so yes?
I agree, leaving it in the refrigerator should be just fine. Make sure to cover it.
Put it in a ziplock freezer bag, and it will hold perfectly.
Leave in fridge or freeze.
