If you don't open the original package it will keep a week or two past it's expiration. Once open (no matter the date) you should put it in a tupperware container with water and change the water every day. You should get 5-10 days by doing this. Once it starts to sour you can boil it but use it all right away. Freezing only effects texture and if you slice it thin (1/4") and wrap each slice separately you'll have the least effect from freezing.
