I have raw green olives, how do you recommend I cure them?

-I don't know their variety
-I have read about several options, namely salt or vinegar.

There are a lot of pages here, but if they omitted anything about olive curing, I'd be amazed: anrcatalog.ucdavis.edu/pdf/8267.pdf Also, if you Google "curing olives," you'll find a couple of videos and more.
