Poach in chicken stock so the meat remains moist.

You can cut in portions, pound to 1/4" thickness, and make turkey schnitzel. http://food52.com/recipes/19475-turkey-schnitzel-with-leeks-and-butter-sage-sauce
You could make your own quick sauce or serve with cranberry or applesauce.

If you can have them thawed at least an hour or 45m before cook you can throw it in a brine and leave it at room temp.
