Actually not all the alcohol will burn off. Most of it will evaporate, but there will still be alcohol. And no amount of cooking will ever remove all the alcohol.

I never have, but I don't see why it would be a problem. Just make sure it is not a super sweet wine or you might as well be dousing your food with grape juice. Also if you are worried about the alcohol it really will burn off when the dish is heated.
