How long can you keep risotto style rice

Is it cooked or uncooked? Uncooked it keeps for at least a year. Cooked, I would say three days before it gets stale.

Refrigerate it right away and it should be good for three days. But it's going to dry out. What I would do is to form it into patties or balls and fry it.
