Heather - I think that sounds delicious! I also love carrots with pot roast too. If you wanted to add carrots they'd look really great on the plate with the collard greens and mashed potatoes. You really can't go wrong. Enjoy!

Thank you Trena! The pot roast recipe that I am using (from The Pioneer Woman) calls for carrots! I usually serve my pot roast with mashed potatoes and green beans and wanted to switch it up a bit!

I often put potatoes and carrots in with the pot roast before it's done and let them cook in the juices. mmmmmmmm
