I like the idea of a rice pudding. Some other ideas include a fool, a custard (creme brulee etc) or pudding, macaroons, or a GF almond cake. I'd also suggest typing "gluten free dessert" into the search box. You'll find a number of recipes, including a GF peach buckle (swap out the peaches for something seasonal) and cherry crisp--both by Glutenfreegirl.
