I was also going tosuggest Jim Lahey’s bread recipe--it shouldn’t be hard to find. It was published in the NY Times, perhaps around 2006. I wouldn’t call it time consuming; you just need to plan ahead because it ferments for a long time. But it does that on its own, without supervision.
You also might google ‘clay pot bread’ for some more ideas.
If the cooker in that picture retains heat like an oven, you could try baking Jim Lahey's no-knead bread in a preheated clay pot. It's very simple, though time consuming (the dough needs a long, slow fermentation).

I would think you could bake any number flatbreads or quick breads like biscuits in a preheated clay pot even with no oven, but only a stove or fire. (Think campfire cookery in a dutch oven.)
