Frozen ginger root few days ago looks the part when taken out but Left to defrost for a couple of hours went soggy isu it still fit to use

Hi, does anyone know how long after defrosting (shredded) ginger that it goes bad in the fridge? Is it like other typical foods that only last 24 hours after defrosting? Thank you

yes, that's what i do. leave it whole, remove from frzr, remove some peel with a veggie peeler or by scraping with a spoon (thx,amanda!), grate or slice while frozen, return to freezer.
defrosted mushy whole ginger is a mess to deal with; you don't want that!

It'll be fine, but why not just keep it in the freezer all the time?
Frozen ginger is easy to grate and keeps a very long time

Yes, the soggy is normal and it's still ok to use. I freeze leftover ginger root all the time and that's what usually happens to it. The flavor however should not be affected too much. If it smells like anything other than ginger, throw it out.
