You can use a cup for cup replacement, such as King Arthur Flour Gluten Free blend. Trader Joe's makes a blend. Glutenfreegirl has a blend that she swears by on her website. http://glutenfreegirl.com...
Because you will always be replacing starch for gluten, you will not yield the same results as this recipe. You can get close, you can get tasty--but the results will vary depending on the Gfree blend you use. In my experience, gluten free versions often yield a crumbly cookie.
