This is more finger food than full-on app, but fried chickpeas dusted with cumin are delicious. I think the NYTimes ran a recipe not too long ago (or maybe it was Food52?). If you google it I'm sure lots of versions will pop up.

You could do a variety of cooked salads: Moroccan carrots (simmer whole carrots with a clove of garlic until tender, slice on the diagonal and dress with lemon juice, olive oil, salt, cumin, cayenne, cinnamon, nutmeg, the cooked garlic clove, mashed, and a dusting of minced parsley); roasted red peppers with fried garlic; fried or roasted eggplant salad with garlic, preserved lemon and a sprinkle of wine vinegar; all served at cool room temp.
Not a Moroccan expert, but I always love a mix of olives as an easy app. There's also a recipe for carrot crostini. You could jazz up the carrots with Moroccan spices. I also believe you could wrap something in phyllo and bake or fry t off.
