I would go with a Turkish tomato salad. Diced tomato (1/4"), diced cucumber, finely chopped lettuce, a bit if small dice onion and a vinegrette with pomegranate molasses. Serve on cups of lettuce leaves if you want more green.

Very chilled butter or Boston lettuce drizzled with a sherry vinagrette with a small amount of Dijon mustard , S&P, in the vinagrette; no other ingredients in the salad
