I have a new twist on a charoset using burnt orange and figs: http://food52.com/recipes/26045-burnt-orange-fig-charoset that would be good with roasted root veggies. And matzo ball soup was always a must- it would be easily adaptable with a good veggie stock.

"Vegetarian" and "Passover" are both tags contributing cooks can add to their recipes here on Food52. If you do a search using just those two terms, you'll find about 130 such recipes. How's this for a start? http://food52.com/recipes/search?q=vegetarian+passover Of course, if you search for "Vegan" + "Passover" you may get some others, as well, depending on how the particular recipes were tagged. Check out the blog "Cafe Liz" by Liz Steinberg. She has an amazing array of great vegetarian Kosher recipes, including posts on her own Passover traditions and innovative recipes for the holy days. She's based in Israel, so the produce available is different, but she thoughtfully provides alternatives and suggestions for hard-to-find ingredients.
