Two questions:

1. I've carmelized a lot of onions in my slow cooker. Any vegetarian recipes to use those onions with?
2. Does anyone have a good vegetarian lentil soup recipe and suggestions for what I could make for dinner with the soup? Fish or vegetarian please.

I would put them with brats or sausages. Potatoes of any kind would be good!

I make frittata with Carmelized Onions, Walnuts and Sherry Vinegar, from Deborah Madison's Vegetarian Cooking for Everyone.

Ina Garten does Onion Dip with them. This is usually a hit at parties, so good. http://www.foodnetwork...

My favorite caramelized onion recipe is a Pissaladiere - classic provencale onion tart, with a scattering of anchovies and nicoise olives (no meat.) It's one of my go-to's to serve with drinks. Good hot or room temp.

This recipe is pretty classic, but there are lots of similar ones out there (I usually just eyeball it.) I typically use store-bought puff pastry instead of the pizza dough, which makes it even easier and is delicious : http://www.epicurious.com...

A pizza topped with caramelized onions and gorgonzola cheese is pretty terrific too.

Caramelized onions are fantastic in a quiche with roasted cauliflower or mushrooms - or both!

Also, caramelized onions are great on a sandwich with brie, mustard, and arugula. Choose a soft ciabatta or similar.

Even simpler than a pizza--I use caramelized onions a small bite appetizer on puff pastry dough with cheese (gruyere, goat, or even cream cheese) and mushrooms (or olives).

I once caramelized some onions, not too too brown, placed them on top of great big refrigerated biscuits and baked them. Really came out wonderfully and goes with any meal, especially one with gravy.
