I'm looking for recipes for vegetarian "chicken" soup recipes. Any suggestions?

I'm getting ready for Passover and some of our guests are ovo-lacto vegetarians. I'm looking for a "chicken" soup recipe as a base for matzo ball soup. All help very appreciated!

I'd make a vegetable stock, and use a pinch of turmeric for color, and use thyme & a bit of sage since those are in poultry seasoning. Most of the recipes for vegetarian chicken stock I found online had nutritional yeast in them... If you can/will eat MSG, you might add a bit of that to give the stock more umami flavor?

Sorry - just to clarify .... Since it's for Passover, I want to avoid yeast/yeasted products and wheat, barley, oats, rye and spelt. Thank you!

Better Than Bouillon has a no chicken base vegetable bouillon. I haven't tried it, but I love their organic chicken and beef bases, so I'm confident that this will be pretty good too.

The yeast products seem to be tricky one as even the Manischewitz vegetable broth has yeast extract. My recommendation is making your own vegetable stock, like Ina Garten's recipe which takes about 45 minutes and can be made ahead of time.

That will be a fine choice for 51 weeks of the year.
For the 52nd week, OP Allison is accommodating BOTH vegetarians AND maybe Passover restrictions of no yeast, leavening nor slow-rise foods.
For a broth that may meet all the restrictions she faces, I would go to the Souper Bouillon from River Cottage.
