Any of you ever make soup with kohlrabi?

Is it a no-no? Don't seem to have one single recipe in my vast collection.

Yes! It's a great creamy soup. You can make a vegan soup with vegetable broth and puréed kohlrabi or add cream to make it more decadent. It doesn't need too much extra but maybe some onion, fennel, celery, sautéed before adding stock. You could also substitute it for carrot or squash in a roasted soup. Perhaps a little acid too, maybe finishing with lemon. And from the spice rack- bayleaf is traditional, but you could try some fresh herbs too. Whatever you have on hand maybe thyme or parsley. If not soup it's yummy roasted or in a slaw, hope this helps!
