Usually cookies are alright to keep them in an airtight container with a piece of paper towel on the bottom of it. Leaving them in the pantry is perfectly okay unless a recipe specifically states to keep in the fridge
What kind of cookies? You man not need to even refrigerate them. Generally, I'd either keep them at room temp in an airtight container, or I'd freeZe (preferably un baked)
