I like to cook the quinoa in a mixture of OJ and water to add a little tang. Mix in diced cukes, roasted red peppers, basil, mint, salt, pepper, olive oil and a little vinegar. Gee, now I want to make it right now!
I don't rinse the quinoa and dress it warm. Mix in peeled, seeded cucumbers in small dice, scallion in rings, slivers of red pepper, shredded radishes (they look like confetti, so pretty). Crumble in a little feta cheese and add cooked chickpeas. Dress with olive oil, sherry vinegar, salt and pepper. Toast shelled pistachios with a little salt, chop and sprinkle over the top. Be careful about the not rinsing. I found out the hard way when I got brand I didn't normally use--some brands are not prerinsed.

Then treat it like Tabouli salad (with the Quinoa instead of the Bulgar wheat).
Lots and lots of chopped parsley, Chopped tomatoes. Dressed in a olive oil lemon juice, garlic, oregano dressing.
Other options would be cubes of cucumbers and bits of feta cheese and chopped green onions.
