Jeni's Splendid Ice Creams is my favorite. Her technique works well and results in creamy ice cream. Ben and Jerry's has lots of recipes for favorite flavors, I use their recipes, adapted to Jeni's technique. Everyone likes David Lebovitz' book, but I haven't found it of much use.

The Perfect Scoop: Ice Creams, Sorbets, Granitas, and Sweet Accompaniments by Dave Lebovitz is a wonderful all-around book. I recently made the cheesecake ice cream and the salted caramel sauce to race reviews for a sundae party at work. I also love Jeni's Splendid Ice Creams at Home, which has a great technique for making super-smooth ice cream, though it's not a good option if you're not ok with corn syrup.

A friend of mine recently bought Sweet Cream And Sugar Cones. She loves it. It's put out by the Bi-Rite people in San Francisco..very yummy shop. :)
