Can white potatoes be substituted for baby yukon gold? I have a recipe that requires boiling the potatoes, and then finishing them in a skillet.

The recipe calls for baby yukon gold potatoes are to be boiled in water with a dash of vinegar until just firm, and finished in a skillet with butter. I am from NJ and want to use local white potatoes.

Absolutely. A little lighter in flavor, but it will be delicious.
