Pickle them! The Gramercy Tavern cookbook has a recipe that I followed, but I'm sure there are good ones online as well.

There is a really good quinoa, cucumber, eggplant with miso and soy on this site. I love it. If you type in Fairytale eggplant in the search function, it will pull up.
