I have a really good dill pickle soup recipe, but it calls for flour to thicken it.. Any suggestions on how to thicken it without flour?

Best in my opinion - in order to thicken it in a creamy way but without flour - is to cook rice (preferably organic brown rice) and cook it to a very creamy consistency, softer than you would do if you were simply eating the rice as a side dish.

Yes, would love to see the recipe. I just did a search on it too to see what the general recipe is like (I didn't realize it already contains potatoes!), and it sounds delicious.

You could add a little bit of corn starch. A little bit at a time till you get the consistency that you want, don't over do it, add a little bit and then stir it and see what you get, if you want it thicker add a little bit more......

Thanks Pegeen & Susan W. I will experiment with potatoes and cauliflower. Susan, if you are a pickle fan and have never had dill pickle soup, I highly recommend it!! :).

I just googled dill pickle soup. To be honest, it's just not something I ever thought to make. Now I am intrigued. If yours is one that includes sour cream, I think you could just skip the flour. I know I prefer clam chowder a little soupy and not thick like a stew.

Cauliflower treated like Pegreen's potatoes works great too. You can also use arrowroot mixed with water. I use it for sauces.

Boil then smash some potatoes. Beat them with a hand mixer if the soup needs to be completely smooth.
