I mashed them, stirred in jalapeño, caramelized onion, bacon and cheddar. Then baked. Last 10 mins broiled with cheddar, parm and breadcrumbs. Sooooooo good!
If you want the classic baked potato texture you probably won't be happy with the yellow potatoes. You may want to do roasted wedges, and just top them with your cheese, etc...
Or make mashed potatoes and stir in your toppings.
