just watched a great short video of a chef making no bake mac & cheese using cheddar and mascarpone on the bluestarcooking.com website.

We only ever use cheddar cheese for macaroni and cheese, but it has to be a good one. Try and use a sharp cheddar and it will be perfect. Currently we use Colliers Welsh cheddar which has serious yum!

John Legend uses mild cheddar and jack. :)

The sharpness of Gruyere does not really show up in mac and cheese, I made it for the little people many times with no objections. But if you want to be on the safe side you can sub it with something milder, swiss or Monterey Jack for example.
