Creme Brulee has been my specialty until dairies started ultra-pasteurizing their whipping cream and half&half. That process makes it impossible to make any kind of custard dessert. Prairie Farms Dairy was the only one in my area that didn't, so I could still make my special dessert. Now, Prairie Farms has not only changed their container appearance, but also have switched to the super heating ultra-pasteurized process. It doesn't say that on the label, so I bought the new container, and ended up with cups of slop after baking.
Here in San Diego, I've seen three brands of pasteurized (not ultra pasteurized) heavy cream. Sprouts sells Top o the morn (something like that, lol) and Strauss. Whole Foods and Windmill Farms also sell Strauss. Smart and Final and Iowa Meat Farms both sell Alta Dena.
Just made Creme Brulee and Creme Fraiche out of Alta Dena heavy cream. Both had loose or uneven textures so I won't use that again for a special cream dessert like Creme Brulee, in particular!
Guernsey Farms Dairy in Northville, MI (outside Detroit) produces pasteurized whipping cream (NOT untrapasteurized). I do not know if they ship products. Here is their phone # 248-349-1466. In their store you can buy this in half pint, quart or half gallon sizes
Ramtoo - Whole Foods does carry low-heat pasteurized heavy cream in Houston. The brand is Mill-King, and it comes in the small plastic milk containers with an orange-colored top. They also have table cream (yellow top) and regular milk. At the very least, it is at the story on Kirby - they deliver on Mondays and Thursdays (if I remember correctly).
unpasteurized is illegal in Texas (SO stupid - there was an actual TV crime drama style police raid on the MILK PEOPLE in Austin a year or so ago because, you know, stop the milk dealers, never mind the corner crack head! Bu I digress ...) but I can find cream at the farmer's market, and it is low heat pasteurized, not ultra. Also, if you can find an artisan cheese maker (also at you farmer's market) I guarantee he or she has a dairy connect, and might could hook you up ....
Thanks for tip about Stewart's they are all around me. Stewart also has repeated been named "best mlk processor" in NY state but it looks like they lost out at last summer's state fair.
In the northeast there is also a brand called Hudson Valley Fresh. Their website lists the stores where their products are sold. I'm on Long Island and their are some listings near my home - the full service gourmet grocery stores.
I nagged the Whole Foods store in Santa Fe, NM until they offered some non-ultra-pasteurized heavy cream. I haven't heard anyone else complain, but I find that ultra-pasteurized dairy products leave a vaguely metallic taste in my mouth. I won't use ultra-pasteurized any more, no matter how convenient it might be.
There are several here, but raw milk is legal here. One brand is Stiebers and another is a local only brand. I'll look in the next day or so and get the names of the others.
