I have Tom Collicio's Pan Roasted Sea Scallops. How can the recipe be changed for scallops without the side muscle?

the recipe calls for scallops with the extra side muscle. i am unable to find scallops with that muscle. can the recipe be augmented to what i have available?

It looks as if the muscles are used to flavor the sauce and then discarded. I would use a couple of sliced scallops, if you can afford to, in their place.
