Your stock pots can work, if it's not too big. Stainless steel fry & saute pans should work as long as they are deep enough so that the water just barely covers the meat. Basically, you are simmering the meat in water and eventually evaporating that water off and browning the meat. I agree baking dishes are not ideal, unless they were also designed for stovetop cooking.
