2.5 poound lamb shoulder...recipe calls for 5 pounds for 3 hours...?would I decrease the cooking time

One hunk...I cooked it the full to,e, and it is absolutely delicious! Not pretty, but good. A honey carrot salad from the same issue of Food and Wine...perfectly paired!

Could you tell us a little more? Is the meat cubed as for stew, or is it one "hunk"?
