Electric mixers are a convenience, not a requirement! If you want to develop stamina and muscles, you don't need a mixer. That said, scones, short cake, soda bread, or sweet yeast breads are easily done by hand.
Most butter cake recipes can be made without an electric mixer, just need a little extra elbow grease: cream the butter and sugar with a wooden spoon, add the eggs one at a time, switch to a whisk to incorporate the milk and flour mixtures--makes a denser cake. But cake baking was around long before electric mixers.
Ditto with cookies. A wooden spoon is all you need. In fact, you don't even need a wooden spoon. I mix some of my favorite cookies with my (very clean) hand.
