Very easy recipe for quick-pickled onions or shallots:
In a jar with a tight-fitting lid, mix together 1/4 cup red wine vinegar, 1/4 cup cold water, 1 Tablespoon kosher salt, 1 Tablespoon sugar. Thin-slice red onions or shallots, add to jar, cover with lid, shake. Keep in fridge for a couple hours or overnight if possible. These will keep in the fridge for about 10 days.
You can add any combination of herbs or spices you like: slivered garlic, chopped dill or cilantro, red chili flakes, cardamom, etc.
