Harumi's Japanese Cooking. (She has another book, also.) Harumi is a Japanese cooking personality with a wide following on her own country. Her American books contain quite a few simple and delicious recipes that aren't too intimidating and that don't require too many unusual ingredients. They're a good introduction to cooking Japanese food.
