How salty is the pan juice from Russ Parsons' Dry-brined turkey? I like to use the drippings in my gravy.

The drippings from dry-brined poultry aren't salty in any noteworthy way. Just make your gravy as usual. What you may find is that you will need to add less or no salt to your gravy.

Taste before seasoning.

I've done the dry-brined turkey and I don't recall the drippings being very salt at all.
