I want to make my turkey gravy ahead of time but would like to add the pan drippings after the turkey is roasted. Does this make sense?

Completely, and it's a great way to get ahead. Make your entire gravy now, stash it away, and when you're rewarming it tomorrow just stir in your drippings.
