Good basic potato leek soup recipe?

Just wing it. It's such an easy and adaptable soup. I slice and caramelize about 3 leeks for about an hour in some oil and butter. Put them in chicken stock with cubed (and rinsed) potatoes and simmer until the potatoes are cooked. Then I use a hand blender to mix it all until smooth, adding more stock to get to the consistency you want. Then add some milk and spices (I find smoked paprika and dried garlic work well, along with some cayenne and chipotle powder). Let simmer for a bit and you're done.
