I just made my first batch of preserved lemons: once they are ready, do I rinse them before using? Do I only use the peel or the whole lemon?

Rinse them thoroughly before eating. You chop up the peel and eat--scrape the flesh off and toss. Yes, it does seem like a waste, doesn't it?

I use the whole damn thing and never rinse it. But I like all that flavour. Just be sure to taste before salting!

I've also been using the whole thing. Just remember to take out the seeds.
