What oven setting? (Sorry, posted this Q twice by accident.) I'm in europe - should I use my fan oven or should I use regular conventional heating...

When using a convection oven (fan) you should reduce the heat by 25 degrees. I forget half the time and have not noticed a negative result.

Just use regular conventional heating (325 deg F = 163 deg C), the typical oven in America doesn't have a fan (convection).
